Easy Vegan Nachos

Crispy tortilla chips layered with melty vegan cheese, beans, and fresh toppings. A quick, customisable snack perfect for sharing.

Ingredients
  

  • 1 large bag thick tortilla chips
  • 1 ½ cups vegan cheese shredded, from a block if possible
  • 1 cup black beans drained and rinsed
  • 1 cup diced tomatoes
  • 1 bell pepper diced
  • Fresh coriander chopped (for garnish)
  • Guacamole salsa, and vegan sour cream (for serving)

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Layer half the chips, then half the cheese, beans, tomatoes, and peppers. Repeat with the remaining chips and toppings.
  4. Bake for 8–12 minutes, until cheese melts and toppings are heated.
  5. Top with fresh coriander.
  6. Serve right away with guacamole, salsa, and vegan sour cream.
