- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Layer half the chips, then half the cheese, beans, tomatoes, and peppers. Repeat with the remaining chips and toppings.
- Bake for 8–12 minutes, until cheese melts and toppings are heated.
- Top with fresh coriander.
- Serve right away with guacamole, salsa, and vegan sour cream.
